The Scale
The Westin Bonaventure is the largest hotel in Los Angeles — thirty-five floors of glass on Figueroa, and a banquet operation that feeds conventions, galas and corporate mornings by the thousand. When their kitchen orders muffins, the unit is not the dozen. It's the thousand.
Our banquet program there runs the whole board: breakfast pastry in volume, classic desserts by the tray — tres leches, strawberry shortcake, flan, royaltine — whole cakes and quiche for plated service, and the service breads that disappear under every banquet in the city.
Banquet time is unforgiving in a specific way: five hundred desserts are not needed at roughly seven o'clock. They're needed at seven.
The Lesson
Anyone can make one beautiful dessert. Banquet work is making the two-thousandth indistinguishable from the first, on a deadline, every week for years. That discipline — built downtown — is what every smaller account inherits from us for free.
It's also why our answer to “can you handle our volume?” is usually a quiet yes.
