Inside the Bonaventure downtown there's a café whose pastry case we have filled every morning — Monday through Sunday, holidays included — for years. Croissants, almond and chocolate, fresh donuts, lemon loaf, brownies, coffee cake. One standing basket, baked overnight, in the case before the first espresso is pulled.
No order calls. No weekly guessing. The café's manager decided once what the case should hold, and our job ever since has been simple and absolute: be there, every morning, identical.
