A good matcha café lives on its drinks, but the case next to the register is where the second sale happens, and it is the hardest part of the shop to run. Roll cakes, Basque cheesecakes and layered matcha cakes take a pastry kitchen, a cool room and a baker who does the same thing every day. Most tea bars have a counter, an espresso machine and a very busy owner. That is where we come in.

Paris Bakery has been a wholesale pastry kitchen in Los Angeles since 1979. We deliver to hotels, tea rooms and cafés across the county every morning, and this year tea cafés have become one of the fastest-growing parts of what we do. Some order from the catalog. Others bring us their own recipes and their own tea powder and ask us to make it exactly as their customers know it.

Both work. From the catalog, ube cheesecake, ube tiramisu, mango cake and passion fruit cake are the pieces that sell in tea shops, all two-bite, all built to hold up in a display case. From your recipe, we run a development program: you send the recipe and the powder, we make it in rounds until it matches your standard, then we produce it weekly. Whole cakes, sliced, or individual portions, delivered fresh or frozen, depending on how you serve.

Do you make matcha desserts?

We make them to your recipe. Matcha, hojicha and black sesame each need a specific powder and a specific method to taste right, so rather than stock a generic version we develop yours: your powder, your recipe, your standard. Roll cakes, chocolate cakes and Basque cheesecakes are the formats we are asked for most.

How does the development program work?

You send the recipe, photos and the tea powder. We produce a first round, you taste it against your standard, and we adjust. A development fee covers up to three rounds per item and is credited against your first production order. Details are on our custom development page.

Can you deliver frozen so we can slice in the shop?

Yes. Many tea cafés take whole cakes frozen, hold them in the shop freezer and slice as the case needs them. It keeps the product consistent and cuts waste. We pack to match how you serve.

Where do you deliver?

Across Los Angeles County, including Pasadena and the San Gabriel Valley, Downtown, the Westside, Long Beach, and into Orange County and Santa Clarita by route. Delivery is quoted by distance; most of the county is inside a $350 minimum.

Is there a minimum?

Yes, set by drive time from our South Gate bakery. Most tea cafés are inside a $350-per-delivery minimum; a weekly order of a few whole cakes and a tray of minis clears it comfortably.
