Most bakeries treat vegan and gluten-free as a special request. For us it is a production line. At one five-star coastal resort alone, our vegan/GF collection — passion fruit, chocolate, chocolate parfait, dulce de leche, strawberry-passion — runs at thousands of pieces a month, every month, alongside the standard menu. It has to look and taste like the rest of the dessert table, because it sits on the same table.
